This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Essence/Extract recipes added to this site.
These recipes, all contain Essence/Extract as a major wild food ingredient.
These are both concentrated flavourings that give the 'essence' of the foodstuff in concentrated form. Usually these essences or extracts are from highly-flavoured foods such as vanilla pods, almonds, anchovies, oranges and coffee beans. As well as extractions from the actual foodstuffs these descriptions can also refer to synthetic flavourings.
For example, vanilla extract is extracted from pure vanilla pods whereas vanilla essence is made synthetically often from the 'vanillin' in wood pulp. Unfortunately, however, the distinction between essence and extract isn't as clear cut and it's aways important to read the label carefully when buying these concentrated flavourings.
