Blackberry and Almond Cake: A British recipe for a classic cake made from a flour and ground almond batter containing blackberries.
Ingredients:
115g butter
115g sugar
3 medium eggs
1 tsp almond extract
40g plain flour
100g ground almonds
1 tbsp milk
350g fresh blackberries
2 tbsp caster sugar
Method:
Cream together the butter and sugar in a mixing bowl until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition. Now add the vanilla extract, followed by the plain flour and ground almonds. Spoon in the milk and beat until the batter is smooth.
Turn the batter into a greased 20cm diameter springform cake tin the base of which has been lined with parchment paper. Layer the fresh blackberries on top of the cake then sprinkle over 2 tbsp caster sugar.
Transfer to the centre of an oven pre-heated to 180°C and bake for about 30 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.
Allow to cool in the tin for 4 minutes then turn out to cool further on a wire rack.
Serve warm, accompanied by clotted cream.
