Ingredients:

300g plain flour
170g butter, softened
240g caster sugar
450g ripe bananas, mashed
2 tsp lemon juice
1 1/2 tsp baking powder
pinch of salt
3 large eggs
1 tsp vanilla extract
350ml buttermilk
125ml dulce de leche

Method:

In a bowl, mix together the bananas and lemon juice then set aside. In another bowl, combine the flour, baking powder and salt.

Add the butter and sugar to a third bowl and cream together until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition. Now add the vanilla extract and beat to combine.

Now add the dry ingredients to the creamed mixture, alternating with the buttermilk. Finally mix in the bananas.

Line muffin wells with paper cases then spoon in the batter. Transfer to an oven pre-heated to 140°C and bake for about 30 minutes, or until the cupcakes are golden brown and cooked through. Remove the cupcakes to a wire rack and allow to cool.

Serve warm, accompanied by the dulce de leche
