Ambrosia Cake

Although good any time of year, this makes a very indulgent cake for Valentine's day.

Ingredients:

For the Cake:
200g butter, softened
400g sugar
4 eggs
1 tsp vanilla extract
420g cake flour, sifted
2 1/2 tsp baking powder
1/2 tsp salt
240ml milk
60g flaked coconut

For the Orange Filling:
200g sugar
3 tbsp cornflour (cornstarch)
1/2 tsp salt
180ml orange juice
60ml lemon juice
120ml water
3 egg yolks, beaten
2 tbsp freshly-grated orange zest, grated

For the Divinity Icing:
300g sugar
1/2 tsp cream of tartar
120ml water
3 egg whites
1/2 tsp vanilla extract

Method:

Begin with the cake. Cream the butter in a bowl then gradually add the sugar, beating until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition then beat in the vanilla extract. In a separate bowl, combine the flour, baking powder and salt then add this to the butter and egg mix, alternating with the milk (begin and end with the flour mix). Beat after each addition, until just blended.

Divide the batter between three greased and floured 22cm diameter springform cake tins. Transfer to an oven pre-heated to 170°C an bake for about 20 minutes, or until the top is golden and a wooden toothpick inserted into the centre of the cake emerges cleanly. When done, remove from the oven and allow to cool in the tins for 10 minutes then remove from the pans and allow to cool completely on wire racks.

When the cakes are baking prepare the orange filling. Combine the sugar, cornflour and salt in a small saucepan then gradually stir in the fruit juices and water to form a smooth slurry. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Allow to boil for 1 minute then take off the heat. Slowly stir a small amount of the hot mixture into the egg yolks then add the resultant mixture back to the pan, stirring constantly. Return to the heat and boil for 1 minute longer, stirring constantly.

Take off the heat and stir in the orange zest then set aside to cool. When the cakes and the orange filling are cool use the orange filling to spread between the cake layers then sandwich them together.

Now blend all the ingredients for the divinity icing together and whisk until smooth and creamy. Use this mixture to spread over the top and sides of the cake.
