Aunt Franny's Cheesecake is a modern American recipe for a classic baked cheesecake on a biscuit (cookie) crumb base filled with cream cheese set with eggs and flavoured with vanilla extract that's topped with a mix of soured cream and sugar. For the Filling:
720g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
5 eggs
1 1/2 tsp vanilla extract
200g granulated sugar
For the Topping:
900ml sour cream
1 1/2 tsp vanilla extract
100g sugar
Method:
Begin with the curst. Combine the biscuit (cookie) crumbs, sugar and melted butter (or margarine) in a bowl. Mix thoroughly to combine then pour into a pan about 33 x 22 x 5cm in size. Tamp down with your hand then set aside.
For the filling, whisk the cream cheese in a bowl until soft. Beat in the sugar until fluffy then add the eggs, one at a time, beating thoroughly to combine after each addition. Finally beat in the vanilla extract then pour over the crust and transfer to an oven pre-heated to 150°C. Bake for 30 minutes then remove from the oven.
In the meantime beat together the sour cream, sugar and vanilla extract for the topping until smooth. Pour this over the baked cheesecake, return to the oven and bake for an additional 5 minutes. Remove from the oven and set aside to cool. Transfer to the refrigerator and chill over night. Serve with cherry pie filling as a topping on the side.
