Baked Millet Biscuits is a traditional Kenyan recipe for a classic biscuit (cookie) made with a mix of sorghum and wheat flour with margarine and sugar that are oven baked until golden. The full recipe is presented here and I hope you enjoy this classic Kenyan version of: Baked Millet Biscuits.

Ingredients:
100g sorghum (or pearl millet) flour
100g wheat flour
115g margarine
150g white sugar
1 egg
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
Method:
Cream the margarine and sugar together then beat-in the egg. Add the flours along with all the other dry ingredients and cream to a smooth batter. Place the batter in a refrigerator over night then roll out on a cold board to a thickness of about 6mm and cut into rounds using a pastry cutter.
Place these on a greased baking tray and bake in an oven pre-heated to 200°C (400°F/Gas Mark 6) for about 10 minutes, or until golden brown all over.
