Air fryer carrot muffins are perfectly moist, soft, and fluffy. These air fryer muffins are easy to make and get ready in no time. The best treat you can make any time of the year. So, you don’t have to wait for Easter to have these delicious light and fluffy carrot muffins. A simple variation of this is if you substitute 45g (½ cup) of the grated carrot for 115g (½ cup) of crushed pineapple.

Ingredients:

120g (1 cup) plain flour
180g (2 cups) fresh carrot (finely grated)
2 eggs
80ml (⅔ cup) vegetable oil
140g (⅔ cup) brown sugar
1 tsp baking soda
½ tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla extract
¼ tsp sea salt

Method:

Thoroughly wash the carrots with clean water and scrape off the skin. Finely grate the carrots and set them aside.

Combine the plain (all-purpose) flour, baking powder, baking soda and salt in a bowl then whisk to combine.

In another bowl, beat together the eggs and sugar until the sugar has dissolved. Add the oil and vanilla extract, mixing until well combined. Now add the flour to the wet ingredients, folding until there are no lumps left. Finally add the carrots and fold in with a spatula (you can add some chopped nuts at this point if you like).

Pre-heat your air fryer to 160°C (320F) for 5 minutes.

2/3 fill your muffin cups with the carrot cake batter. You can add some dried fruit at this stage. Transfer the muffin cups to your pre-heated air-fryer and cook for 10 minutes. Test for done-ness by inserting a toothpick into the centre of the cakes. When done, they will emerge cleanly. If not ready cook for a further minute or two, until they are done.

Transfer the muffins to a wire rack and allow to cool before icing (frosting). They can, of course, be served unadorned.
