Ingredients:
300g sugar
1/4 tsp cream of tartar (or 1 tbsp golden syrup [corn syrup])
1/8 tsp salt
80ml water
2 egg whites
1 1/2 tsp vanilla extract
Method:
Combine the cream of tartar (or syrup), salt, water and egg whites in the top of a bain-marie (double boiler). Whisk briskly for 2 minutes then set over a pan of simmering water (do not allow the top pan to touch the water) and beat constantly (preferably with an electric mixer on high speed) for 7 minutes.
Take off the heat, beat in the vanilla extract and use.
