These are classic Easter-themed cupcakes from the USA that are sure to be a hit with the kids.

Ingredients:

2 large eggs, cracked open
1 tsp vanilla essence
125g caster sugar
125g soft margarine
125g self-raising flour

50g butter
100g sieved icing sugar
toasted coconut flakes
jelly beans (in pastel shades) or mini chocolate eggs

Method:

Simply place all the ingredients in a bowl and beat them together until the mixture is pale and light. Line a tin (a multi-well bun tin or cupcake tin) with paper cases then half-fill each with your cake batter.

Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 20 minutes. The cakes are done when they are well risen, are golden in colour and spring back when pressed with your fingertips.

Form a butter icing by creaming together the butter and icing sugar. Use this to create a nest shape on top of each cupcake. Scoop a hollow in the middle and add a few jellybeans or mini eggs as decoration. Dust around with the toasted coconut flakes to give the appearance of a nest.
