Amaretti Orestano

Ingredients:

225g blanched almonds
180g sugar
2 egg whites
1/2 tsp almond extract.

Method:

Place the almonds in a warm oven for 5 minutes to dry and colour then chop very finely in a coffee grinder so that you have a powder. Add the sugar to this and mix well. Beat the egg whites until stiff and add to the almonds and sugar. Add the almond extract and blend together gently (don't over do the mixing as you will lose the air from the mixture).

Butter and flour a baking tray and drop the batter onto this in tablespoon heaps (leave 3 cm between each biscuit). Sprinkle icing sugar on top of each, allow to stand for 2 hours then place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for 5 minutes, or until the amaretti are delicately brown in colour.
