Ingredients:
165g (1 5/8 cups) Rolled Oats
3 Medium Bananas
2 Large Eggs
240ml (1 cup) Greek Yoghurt
2 tbsp Honey
½ tsp Vanilla Extract
1 tsp Baking Powder
50 Blueberries
Method:
Peel and chop your banana into thirds, then place everything (except the blueberries) into a blender or food processor).
Process until you have a creamy batter and there are no banana lumps. Pour the resultant muffin batter into your silicone cups and place in the air fryer. Add about 4 blueberries into the batter so that they are submerged and then add another 3-4 on top.
Transfer to your air fryer and cook for 12 minutes at 180°C (360°F). Remove from the air fryer and allow to cool before serving.
