Banana Cake: A classic American version of a sponge cake with bananas and nuts in a batter that's baked in a loaf tin.

Ingredients:

3 bananas, mashed
120ml milk
1 tsp baking powder
250g butter
180g sugar
1 tsp vanilla extract
3 eggs
350g self-raising flour

Method:

Combine the mashed banana with the milk and baking powder in a small saucepan. Heat, stirring continually, until the mixture is bubbling. Allow to cool.

Meanwhile, cream together the butter and sugar until pale and cream. Add the eggs one at a time and beat into the mixture. Then add the vanilla extract. Then add the flour a little at a time, beating all the while until the flour is completely incorporated into the batter. Finally add the banana mixture and beat to combine thoroughly into the batter. Turn the batter into a greased and lined loaf tin.

Transfer to an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for 45 minutes until the cake has set and is golden brown on top.
