Ingredients:

245g plain flour
400g sugar
105g cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
240ml strong black coffee
240ml buttermilk (or sour milk by adding 1 tbsp vinegar to 230ml whole milk)
120ml vegetable oil
1 tsp vanilla extract

1 batch Vanilla Cream Cheese Icing

Method:

Combine the flour, sugar, cocoa powder, taking soda, baking powder and salt in a large mixing bowl. Stir to combine thoroughly then add the eggs, coffee, buttermilk, oil and vanilla. Beat thoroughly until combined to a smooth batter (this will be thin) then turn into a greased and floured cake tin (about 33 x 22 x 5cm in size) or divide between two 22cm diameter sandwich pans.

Transfer to an oven pre-heated to 170°C and bake for about 30 minutes (small pans) or 40 minutes (large pan) until the top is golden and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the pan for 10 minutes before turning onto a wire rack to cool completely. When cold decorate with Vanilla Cream Cheese Icing then serve.
