Mayonnaise is a creamy cold sauce made by beating oil and egg yolks together, usually in the presence of white wine vinegar, salt, pepper and mustard. As such it is an emulsion and home-made mayonnaise has the tendency to separate if left standing too long. Mayonnaise is often used with seafoods, white poultry and salads. It also forms the basis for several other sauces and dressings such as: tartare sauce, aioli (garlic mayonnaise), Thousand Island dressing and rémoulade.
In some lists, mayonnaise is included as the sixth French mother sauce (Sauces Mères).
