Meat Stew with White Beans (Nigerienne Touo): A Nigerienne recipe for a classic vegetarian stew of mutton and white beans in a tomato and vegetable base.
Ingredients:
1kg mutton, cut into 3cm pieces
500g white beans
4 onions, chopped
2 large green bell peppers, chopped
5 tomatoes, chopped
2 garlic cloves, chopped
250ml groundnut oil
1 tbsp tomato purée
2 tbsp mayonnaise
2g natron (rock salt)
250ml water
Method:
Wash the beans, place in a large bowl, cover with plenty of water and set aside to soak over night. The following day, drain the beans, place in a saucepan, cover with plenty of water then add the natron, bring to a boil and cook for 60 minutes, or until the beans are soft. Drain and set aside until needed.
In the meantime, heat the groundnut oil in a large pot. Add the meat pieces and fry until nicely browned all over. Now add the onions and the bell peppers. Fry for a few minutes, until the onions are soft then add the tomatoes and the garlic.
Bring the mixture to a simmer and continue cooking until almost all the liquid has evaporated (about 30 minutes). Stir in the tomato purée then add the water. Bring back to a simmer and cook for about 30 minutes more, or until the meat is tender.
Stir in the beans and allow the mixture to heat through for 10 minutes. Serve hot, accompanied by bread and mayonnaise.
