Macaroni Salad

Macaroni Salad is a traditional American recipe for a classic salad of elbow macaroni, celery, bell pepper and carrots in a mayonnaise, mustard and mustard dressing dressing that's often served as a Thanksgiving accompaniment. Ingredients:

550g uncooked elbow macaroni
250ml mayonnaise
200ml white vinegar (divided)
2 1/2 tbsp English or Dijon mustard
1 1/2 tsp sea salt
1/2 tsp freshly-ground black pepper
1 large onion, chopped
2 celery sticks, chopped
1 green bell pepper, de-seeded and chopped
40g grated carrots
2 tbsp chopped pimento chillies (optional)

Method:

Bring a large pan of lightly-salted water to a boil. Add the macaroni and cook for about 8 minutes, or until just tender. Take off the heat, drain in a colander then rinse under cold, running, water.

Meanwhile, mix together the mayonnaise, vinegar, sugar, mustard, salt and black pepper in a large bowl. Add the onion, celery, green bell pepper, carrot and pimentos then stir to combine. At this point add the macaroni and toss to combine and coat with the other ingredients.

Cover the bowl with clingfilm and refrigerate for at least 4 hours before serving (best if chilled over night).
