Ingredients:
250ml mayonnaise
2 tbsp Dijon mustard
1 tbsp pickled spruce tips, chopped
1 tbsp gherkins, finely chopped
2 anchovy fillets, finely chopped
2 tbsp chervil, finely chopped
1 tbsp tarragon, finely chopped
salt and freshly-ground black pepper, to taste
Method:
Place the mayonnaise in a bowl then beat in the mustard before adding all the remaining ingredients and mixing thoroughly.
This sauce can be used to accompany fish, as it is or it can be blended with 400g of shredded celeriac to make the classic celeriac rémoulade salad to accompany white fish.
