This is an unusual West African dish, where the tomato sauce is served as an accompaniment to a tomato and bell pepper meat stew.
Ingredients:
1kg mutton
500g dried white beans
4 onions, chopped
2 large green bell peppers, cored and chopped
5 tomatoes, chopped
2 garlic cloves, chopped
250ml groundnut oil
1 tbsp tomato purée
1/2 tsp baking soda (or potash)
250ml water
4 tsp mayonnaise
bread, to accompany
Method:
Soak the beans in a large bowl of cold water over night. The following day, drain the beans, place in a large pot with the baking soda and cover with plenty of water. Bring to a simmer and cook for about 60 minutes (depending on the type of bean used), or until tender.
Heat the oil in a large pot. Add the meat and fry until browned. Now add the onions and bell peppers. Stir in the tomatoes and garlic and bring to a simmer. Continue cooking for about 20 minutes, or until all the liquid has evaporated then stir in the tomato purée.
Bring back to a simmer and cook gently for 30 minutes, or until the meat is tender.
Serve the meat sauce poured over the beans. If desired, this dish can be accompanied by mayonnaise and crusty bread.
