Devilled Eggs

Devilled Eggs is a traditional British recipe for a classic starter or snack of boiled eggs that are halved, have their yolks removed and mixed with paprika, mayonnaise and mustard powder before re-filling the hollows in the egg with the mixture and serving. Devilled eggs make great (and simple) starters any time. Though associated with Easter, they also work very well for a New Year's feast.

Ingredients:

6 eggs
1/2 tsp paprika
2 tbsp mayonnaise
1/2 tsp mustard powder
paprika, to garnish

Method:

Place the eggs in a pot of salted water. Bring the water to a boil, and leave the eggs cook in the boiling water until they are hard-boiled, (approximately 10 to 15 minutes). Drain eggs and allow to cool before peeling.

Cut the eggs in half, lengthways. Remove the egg yolks and mash them together in a small mixing bowl. Mix-in the paprika, mayonnaise, and dry mustard. Spoon this mixture into the egg shells, chill in the fridge and serve.

If desired, you can dust with paprika before serving.
