Salada di Batata (Potato Salad)

Ingredients:

8 potatoes, peeled, boiled, cooled and cubed
2 hard-boiled eggs, cooled and cubed
500ml mayonnaise
2 tbsp crispy bacon pieces
1 tbsp strong beef stock
1 tbsp prepared mustard
1/2 tbsp vinegar
salt and black pepper, to taste

Method:

Combine the mayonnaise, beef stock, mustard and vinegar in a bowl. Season with salt and black pepper then stir to combine. Add the bacon pieces and stir to mix.

In a separate bowl, combine the potatoes and eggs. Add the mayonnaise mix and stir to combine. Serve on a bed of lettuce, garnished with parsley.
