At first glance this cake may sound a little odd, but just remember that mayonnaise is an emulsion of eggs and oil and it is a mix of flour, eggs, oil, and chocolate that forms the basis of many fudge cakes. So, this is just a chocolate cake in another guise.

Ingredients:

240ml boiling water
70g cocoa powder
315g plain flour
2 tsp baking soda
1/4 tsp salt
240ml mayonnaise
250g sugar
1 tsp vanilla extract

Method:

Add the cocoa powder to a small bowl, pour the boiling water over the top then whisk until smooth before setting aside to cool.

Now sift together the flour, baking soda and salt in a separate bowl and set aside. Meanwhile, whisk together the mayonnaise and sugar until light and fluffy before beating in the vanilla extract and the cooled cocoa mixture. Beat until thoroughly combined then gradually add the flour mixture, beating until the batter is just combined. Divide the resultant batter between two greased and floured 22cm diameter sandwich pans.

Transfer to an oven pre-heated to 170°C and bake for about 25 minutes, or until golden brown and firm on top and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the tin for 10 minutes then turn out onto a wire rack and allow to cool completely. Sandwich the two halves of the cake together then decorate as desired before serving.
