Dulse-dressed Prawns

Ingredients:

150g peeled king prawns
2 tbsp mayonnaise
2 tbsp Dijon mustard
1 tbsp white wine vinegar (or cider vinegar)
1 tbsp grated onion
1/4 celery stick, minced
1 tbsp dried dulse flakes, crumbled
olive oil for frying

Method:

Add a little olive oil to a pan and use to fry the prawns for about 3 minutes, or until pink and cooked through. Turn onto a plate and set aside to cool.

Once the prawns are cold combine all the remaining ingredients in a bowl and mix thoroughly. Ad the prawns and toss to combine then cover with clingfilm (plastic wrap) and chill for at least 3 hours before tossing and serving.
