This is a classic lunchtime dish served in pubs all across Cornwall. The secret of this recipe is in using fresh granary bread and home-made mayonnaise. Deceptively simple, but delicious if you use good crab meat (the sweet meat of spider crabs is the best for this).

Ingredients:

2 thick slices of fresh granary bread
4 tbsp fresh mayonnaise
100g (3 1/2 oz) (about) fresh crab meat
2 sprigs of watercress
sea salt and freshly-ground black pepper, to taste
green salad, to accompany
lemon wedge, to accompany

Method:

Mix the crab meat with the mayonnaise and season to taste with salt and black pepper. Spread this mixture thickly over a slice of bread then garnish with two sprigs of the watercress.

Add a squeeze of lemon juice, sit the second bread slice on top then cut in half.

Serve immediately, accompanied by a small green salad and a lemon wedge.
