This is a classic Zanzibari starter often served at lunchtime, but it's also delicious before a dinner party. I've even had this for breakfast!

Ingredients:

1kg cooked spinach
2 small lettuces, shredded
300g capers
300ml mayonnaise
3 bunches fresh dill
4 kg cooked seafood (any mix of prawns, octopus, mussels, abalone, blackfish, king fish, tuna)
salt and freshly-ground black pepper, to taste
6 to 8 Maandazi
lime eighths to garnish

Method:

Simply mix the ingredients together, add the mayonnaise and toss. Season to taste. Halve the Maandazi (Swahili doughnut). Place one half on your serving plate and spoon the salad mixture on top.

Place the other half of the Maandazi on top of this then garnish with a lime wedge and serve.
