Curried Chicken and Peach Salad

A Floridian take on curry, converting it into a main course salad with peaches that's kind-of a riff on coronation chicken. In the original recipe there was no cooking needed. However, I don't think raw curry powder is that great so I've added a simple toasting step.

Ingredients:

125ml mayonnaise
1 1/2 tsp curry powder
300g cubed cooked chicken breasts
75g chopped walnuts
50g raisins
2 medium peaches, sliced
150g mixed salad greens

Method:

As curry powder mellows and improves its flavour when it's toasted, I place a small non-stick frying pan over medium heat. Once hot, add the curry powder and toast for about 90 seconds until aromatic stir constantly and do not allow to burn, or the spices will become bitter. Turn the toasted curry powder onto a plate and set aside to cool.

Stir the curry powder into the mayonnaise then toss gently with the chicken, walnuts and raisins.

Line a bowl with the greens, arrange the peach slices on top then spoon over the curried chicken mixture. Serve slightly chilled.
