An aloo bread pakora is a sandwich with a potato filling that is quartered, dipped in batter and then fried. This makes an excellent breakfast or tea time treat. Here I’ve adapted to original Indian recipe to be cooked in an air fryer, yielding a healthier but still tasty result. I’m using mashed potatoes in this case. These can be cooked, mashed and cooled specifically for this recipe, but you can just as easily use leftover mash. If you have leftover baked or roast potatoes, scoop out the flesh and use that as your mash, the flavour will be awesome.
Ingredients:
Ingredients for air fryer bread pakora potato stuffing:
2 medium-sized potatoes (boiled and mashed)
1 tsp vegetable oil
1 green chilli, finely chopped
1 ½ tbsp onion, chopped
¼ tsp ginger paste
2 tbsp spring onion/coriander (cilantro)
¼ tsp garam masala
1 tsp red chilli powder
Pinch of ground turmeric
Sea salt to taste
Ingredients for the bread pakora batter:
65g (½ cup) chickpea flour (gram/besan)
2 tbsp cornflour/rice flour
½ tsp red chilli powder
Pinch of ground turmeric
Sea salt to taste
Water, as required
2 slices of bread
Ketchup or tomato sauce
Mayonnaise
Melted butter or ghee, for brushing
Method:
Heat a pan with 1 tsp of vegetable oil in small heat. Add ginger paste, turmeric, garam masala, and green chili, and sauté them until aromatic. Now add the mashed potatoes, chopped onions, spring onion, red chilli powder, and season to taste with salt. Mix everything thoroughly then set aside.
Take two slices of bread and spread tomato sauce and mayonnaise on each one. Evenly spread the mashed potato filling on one of the bread slices, then cover with with second slice of bread, making sure that the tomato and mayonnaise is in contact with the potatoes. Press the bread from the top so that the bread slices will hold the stuffing properly.
Cut the bread diagonally into four triangles then set aside.
Now prepare the pakora batter: Add all the dry ingredients to a bowl and mix them until well combined. Splash in some water and continue mixing until you have a thick batter.
Gently dip the stuffed bread into the batter, ensuring that it’s evenly coated. Let the excess batter drop off, then transfer the bread to your air fryer basket. Brush a thin layer of butter (or ghee) over the bread pakoras.
Cook at 180C (355F) for 5 minutes on each side. Flip the pakoras halfway through the cooking process, brush a thin layer of melted butter on top and cook for 5 minutes more.
Remove the crispy air fryer bread pakora from the basket and serve with green chutney or with your favourite dipping sauce.
