Tuna-stuffed Tulips

Ingredients:

12 brightly-coloured tulip flowers
440g tinned tuna (in water or brine), drained
3 celery sticks, coarsely chopped
1 tsp curry powder
80ml mayonnaise
freshly-ground black pepper, to taste
lettuce, to garnish

Method:

Remove the petals from 8 of the tulips and cut off the white bases of the flowers (these can be bitter). Shred the remaining portions of the petals and set aside.

Meanwhile, mix together the tuna, celery, curry powder, mayonnaise and black pepper in a large bowl. Add the shredded petals and toss gently to combine.

Take the remaining tulip flowers and cut off the stems then remove the pistils and stamens from inside the flowers. Place each tulip flower on a bed of lettuce then gently spoon the tuna mixture inside the tulips.

Serve immediately as a starter.
