Cocktail de Crevettes (Senegalese Prawn Cocktail) is a traditional Senegalese recipe for a classic restaurant-style salad of prawns, baby sweetcorn and heart of palm in a mayonnaise, tomato puree and chilli dressing, garnished with white salad and decorated with hard-boiled eggs. Ingredients:

800g fresh prawns
1 tbsp groundnut oil
1 white salad (white cabbage, beansprouts, etc)
2 eggs
1 small tin of baby sweetcorn
2 hearts of palm
1l mayonnaise
1 tbsp tomato ketchup
generous pinch of hot chilli powder
salt and freshly-ground black pepper, to taste

Method:

Boil the eggs until hard. In the meantime, peel the prawns, heat the oil in the pan and use to fry the prawns for about 5 minutes, or until pink. Take off the heat, allow to cool then chill in the refrigerator.

Drain the sweetcorn then slice the hearts of palm. Combine the mayonnaise, ketchup, chilli powder, salt and black pepper in a bowl. Add the chilled prawns, drained sweetcorn and sliced hearts of palm then toss to mix.

Turn into a serving bowl, garnish with about 4 cups of the white salad mixture and decorate with the eggs, quartered. Cover and refrigerate to chill for at least 1 hour before serving.
