These recipes, all contain Zest as a major wild food ingredient.

The Zest is the outer rind of a citrus fruit. It is this region of the fruit that contains the essential oils and which imparts much of the fruit's flavour. When removing the zest of a citrus fruit do so carefully with a grater or potato peeler to ensure that you do not remove any of the bitter pith along with the zest.

As well as imparting citrus flavour to a dish the zest can also be used as a garnish to many sweet dished.
