Cannoli Cake

Ingredients:

For the Cake:
1 (500g) box (or 1 batch) lemon cake mix
120ml vegetable oil
4 eggs
240ml milk
freshly-grated zest of 1 lemon

For the Icing:
240ml ricotta cheese
150g granulated sugar
1/2 tsp ground cinnamon
1 tsp vanilla extract
icing sugar, to dust

Garnishes:
Maraschino cherries, well drained and patted dry (optional)
Chocolate chips
cannoli

Method:

Combine the cake mix, vegetable oil, eggs and milk in a bowl. Beat with a wooden spoon to blend thoroughly then divide between two 22cm sandwich pans that have been greased and floured. Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the top is golden and a skewer inserted into the centre emerges cleanly. Transfer to a wire rack and allow to cool in the tins for 10 minutes then turn out onto a wire rack to cool completely.

In the meantime blend together the ricotta cheese, sugar, cinnamon and vanilla extract in a bowl until smooth. When the cakes are cooled place one layer on a serving plate. Take just under half the icing and spread over the top of the cake. Place the second layer over the top then spread the remaining icing over the top before dotting with your selection of Maraschino cherries, chocolate chips and cannoli.

Dust with icing sugar and serve.
