Brandy Butter

Ingredients:

5 tbsp softened, unsalted butter
100g caster sugar
3 tbsp brandy
1/2 tsp vanilla extract
freshly-grated zest of 1/2 lemon

Method:

Combine all the ingredients in a bowl and either beat with an electric whisk or work with the back of a spoon until you have a mixture that's smooth and thoroughly integrated. Spoon into some clingfilm (plastic wrap) and roll into a sausage shape. Tie securely then transfer to the refrigerator and chill for at least 4 hours, or until firm.

Traditionally this is served with Christmas plum puddings and mince pies.
