Cari Langoustes (Lobster Curry)

Ingredients:

1 large lobster (about 1.5kg) or 12 langoustine tails
250g onions, cut into thin slivers
400g ripe tomatoes, finely chopped
10 garlic cloves, crushed
salt, to taste
1/2 tsp thyme leaves
15 black peppercorns, crushed
25g freshly-grated ginger
zest of 1 lime (or 4 Kaffir lime leaves, crumbled)
1/2 tsp ground turmeric
6 tbsp oil
1 bunch of parsley, finely chopped

Method:

This is best made with a live lobster. Bring a pan of water to a boil, plunge the lobster into this and cook for 5 minutes.

Drain the lobster and detach the body. Remove the meat and cut into six pieces. Split the heat and remove the creamy part. Crush the claws and legs and remove the meats.

Heat the oil in a flame-proof casserole. Add the onions and thyme and cook for about 8 minutes, or until the onions are golden brown. Stir in the black pepper, ginger, lime zest and turmeric then add the chopped tomatoes.

Cover the casserole and simmer for 10 minutes. Now add the pieces of lobster and mix thoroughly to combine with the sauce. Cook for 10 minutes then stir in 400ml water. Bring to a simmer, cover and cook for about 25 minutes over low heat.

Turn into a serving dish, garnish with the chopped parsley and serve with rice.
