Apelsinfisk (Fish with Orange) a Classic Swedish recipe for a stew of fish fillets in a sour cream base flavoured with lobster stock, orange zest and herbs.

Ingredients:

600g fish fillet
1/2 tsp sea salt
600ml sour cream
1/2 tbsp plain flour
1 1/2 tbsp concentrated lobster stock
finely-grated zest of 1/2 orange
1/2 tsp fresh thyme
6 tbsp chives, chopped
fresh thyme, to garnish
finely-pared orange zest, shredded

Method:

Divide the fish into four equal-sized pieces. Season with salt and set aside.

In a bowl, whisk together the cream, flour, lobster stock, orange zest, thyme and chives in a bowl. Turn into a pan and gently bring to a boil then add the fish.

Reduce to a simmer and cook, uncovered, over low heat for about 6 minutes or until the fish is just cooked through.

Arrange the fish on serving plates and spoon over the sauce. Garnish with sprigs of fresh thyme and shredded orange zest.

Serve accompanied by roasted root vegetables
