This recipe is based on my mother’s classic version of a quick Christmas cake — the Christmas cake that you can make with less than a week left to the big day. This is also a version of a rich fruit cake that makes the basis for traditional wedding or birthday cakes. I’m adapting the recipe quite a bit here and it will come out significantly lighter than a traditional Christmas cake. It still packs in a lot of flavour though and is nice and moist.
Ingredients:
225g (1/2 lb) Butter
225g (1/2 lb) Caster Sugar
1 tbsp Golden Syrup (light corn syrup)
4 Large Eggs
60g (2 oz) Ground almonds
255g (1/2 lb) Plain Flour
¼ tsp Baking Powder
300g (2/3 lb) Currants
150g (1/3 lb) mincemeat
115g (1/3 lb) Raisins
115g (1/3 lb) Sultanas
60g (2 oz) Glace Cherries, chopped
50ml (1/5 cup) Brandy (optional)
1 tsp mixed spice (pumpkin pie spice)
¼ tsp freshly-grated nutmeg
¼ tsp ground cinnamon
¼ tsp ground cloves
finely-grated zest of 1 orange
finely-grated zest of 1 lemon
finely-grated zest of 1 lime
Method:
Cream together butter and sugar into a mixing bowl (either by hand or with a hand mixture) until pale and creamy. Add the eggs, one at a time, beating thoroughly to combine after each addition. If the mixture looks like it may be curdling add a tablespoon of flour.
Beat in the golden syrup and then add in the baking powder, ground almonds and half of the flour. Mix slowly so that the wet ingredients are well coated in the dry ingredients. Then slowly, add the remainder of the flour, a little at a time.
Little by little (and using a fork to mix with), add in all the dried fruit and the cherries. As you add more and more in, it will become harder to mix, but stick with it, until all the ingredients are thoroughly combined.
Transfer the Christmas cake mix into a silicone baking mould that is either 15cm (6 in) or 17.5cm (7 in), depending on the size of your air fryer then transfer the silicone mould into the air fryer basket.
Air fry for 40 minutes at 150C (300F) for 40 minutes, followed by 10 minutes at 160C (320F).
Carefully remove the cake from the silicone mould and transfer to a wire rack set on a tray. Coat in brandy and leave over-night. After this time, you can decorate the cake as you would any Christmas cake.
