Ingredients:
Juice and grated zest of 1 small orange
1 tbsp clear honey
1 tbsp rice or white wine vinegar
1 tbsp soy sauce
1 tsp cornflour
100g mange tout (trimmed)
225g young broccoli (florets removed and stems cut to matchsticks)
1 small onion, finely sliced
3 cm fresh ginger, grated
1 clove garlic, crushed
1 tbsp groundnut oil
Method:
Create a honey glaze by mixing together the orange juice, honey, vinegar, soy sauce and cornflour then whisk into a smooth paste. Heat your wok, add the oil and when it's almost smoking add the ginger, garlic and orange peel. Cook for a minute then add the mange tout, broccoli stems and onion. Cook for about three minutes then add the broccoli florets and cook for two minutes. Whisk your honey glaze then pour over the vegetables. Cook for a minute to a minute and a half, tossing the vegetables to ensure that they are coated evenly.
Season and serve immediately. This makes an excellent accompanying dish to strongly-flavoured foods such as Asian mushrooms or duck.
