Carob-Chestnut Fudge

Ingredients:

675g shelled, boiled chestnuts
180g pecans or other nuts
100g unsweetened shredded coconut
6 tbsp sesame oil
90g carob powder
1 tsp vanilla extract
1 tsp Angostura bitters
1 1/2 teaspoons freshly grated orange zest
2 tbsp honey

Method:

Place all the ingredients in a food processor and process until smooth. Press the resultant mix into a lightly-oiled 25cm x 15cm x 5cm baking dish. Press down to pack firmly, place in the fridge and allow to chill completely before cutting into rectangles.

This is best served chilled.
