These recipes, all contain Clarified Butter as a major wild food ingredient.

Clarified butter, known as Ghee in India is butter that has been gently heated to separate the milk particles and other impurities that float to the top.

This prevents the butter from looking cloudy when melted and prevents it from burning when used to cook with so that it can be used for cooking at higher temperatures.
