Boondi Laddu a Classic Indian recipe for a Diwali sweets (candies) of deep fried chickpea batter blended with nuts and fruit into balls bound with sugar syrup.

Ingredients:

For the Boondis:
250g gram (chickpea) flour
1/4 tsp saffron, crumbled
oil for deep frying
400g sugar

For the Laddu:
4 tbsp ghee
2 tbsp cashew nuts, chopped
1 tbsp raisins or currants
1 tsp ground cloves
1/2 tsp ground cardamom
2 tbsp almonds (badam), chopped
2 tbsp pistachio nuts, chopped

Method:

Sift the gram flour into a bowl and work in just enough water to from a thick batter (think of a thick pancake batter). Crumble in the saffron and stir to combine.

Heat oil in a wok or kadai to a depth of 2cm. Set over medium-hot heat and when hot pour the batter into a fine sieve or boondi karandi so that the drops of batter fall into the hot oil. Fry until golden brown then remove with a slotted spoon and drain on kitchen paper as you cook the next batch.

Continue until all the boondi batter is cooked. For the syrup, combine the sugar with 200ml water in pan. Heat gently until the sugar has dissolved then bring to a boil. Cook until you have a thick syrup that flows off a spoon as a single thread.

Heat the ghee in a pan. When hot, add all the laddu ingredients. Mix well to combine and cook until just warmed through and the nuts are lightly toasted.

Stir in the boondis then mix with the syrup. Stir well to combine then take off the heat and set aside to cool slightly.

Whilst still warm, shape the syrup coated boondi and fruit mixture into round laddus (you should get about 20). Put on a plate and set aside to dry.

Store in an air-tight container.
