Carrot Halwa

Carrot Halwa is a modern Fusion recipe for a classic sweet (candy) or snack of carrot flesh cooked with milk, spices and nuts until thick that's set and decorated with edible silver leaf, watermelon seeds and rose petals and which makes and excellent treat for Eid. Ingredients:

500g carrots, peeled and grated
600ml milk
1 tsp cardamom seeds, crushed
1 tbsp sultanas
2 tbsp clarified butter (ghee)
8 tbsp sugar
3 tbsp halved cashew nuts, lightly toasted
3 tbsp flakes almonds, lightly toasted
3 tbsp pistachio slivers, lightly toasted
1 tsp rosewater

To Garnish:
edible silver leaf, watermelon seeds, red rose petals, pistachios, dried fruit

Method:

Finely grate the carrots then combine in a large, non-stick, pan with the milk, cardamom seeds and sultanas. Place over gently heat and slowly bring to a simmer, stirring constantly. Continue cooking until the carrots are tender and almost all the liquid has evaporated (stir more frequently as the mixture thickens).

Stir in the butter, sugar, nuts and rosewater then take off the heat and spread the halwa in a shallow pan. Garnish with the silver leaf, watermelon seeds and rose petals then set aside to cool.

When cooled to room temperature, cut into squares, garnish as desired and serve.
