Bakari Riha (Mutton Curry)

This is a classic recipe for a mutton curry from the Maldives. It uses a dark toasted meat curry powder that's very similar to Sri Lankan meat curry powder.
Method:
Wash the pieces of mutton well then place in a bowl, squeeze over the lime, add the salt, ginger and garlic along with 1 tbsp of curry powder and mix everything together well. Cover and set aside to marinate in the refrigerator for at last 2 hours.
Place a wok or large cooking pot over medium heat. Once hot add the ghee and use to fry the onions, curry leaves, raanbaa, cinnamon, cardamom and cloves.
Stir-fry the mixture until the onions soften and turn transparent (about 4 minutes).
Add the remaining 3 tbsp curry powder and mix thoroughly to combine. Let it cook for around a minute or until you can smell the spicy aroma rising from the pot.
Add the mutton, keeping the heat on medium and cook until the outsides of the meat pieces lose their raw reddish colour (4-5 minutes), stirrin to ensure they're evenly coloured.
Pour in the water, stir to combine, put the lid on and bring the mixture to a boil. Once it begins to boil, turn the heat to very low and let it cook until the meat becomes really tender (about 45 minutes).
When the meat is cooked, stir in the coconut milk and let it cook for a further 30 seconds to warm through.
