Balushahi

Balushahi is a traditional Indian recipe for a classic snack or dessert of fried curd, ghee and flour balls that are dipped in sugar syrup before serving, and which are a traditional snack or treat for Diwali. Balushahi a Classic Indian recipe for a snack or dessert of fried curd, ghee and flour balls that are dipped in sugar syrup before serving, and which are a traditional snack or treat for Diwali.

Ingredients:

250g fine plain flour (maida)
1/2 tsp baking powder
pinch of baking soda
100g curds
50g ghee
200g sugar
2 tbsp lime juice
2 tsp pistachio nuts, finely chopped, to garnish
oil for deep frying

Method:

Sift together the flour, baking powder and baking soda into a bowl. Add the ghee and rub into the flour with your fingertips until the mixture resembles fine crumbs.

Add the curds and gently mix the ingredients together to form a dough (do not over work the dough). Cover and set aside to rest for 20 minutes.

After this time shape the dough into small balls then use your thumb to form a dent in one side of the balls.

Heat oil in a deep fryer or deep pan to 140°C. When the oil reaches temperature add the balls in batches and cook gently until nicely browned all over.

In the meantime, mix the sugar in a bowl with 100ml water and 2 tbsp lime juice. Heat gently until the sugar dissolves, then bring to a boil and cook until the syrup thickens.

Remove the balushahis from the oil and drain on kitchen paper. Dip in the balushahis in the syrup, turning them gently to coat evenly.

Remove with a slotted spoon and set on a serving plate to cool. Garnish with the chopped pistachio nuts and serve.
