Asharbal Leebia (Libyan Soup 2)

Ingredients:

1 tbsp olive oil or ghee
1/2 tsp salt
1 onion, chopped
1/2 tsp bzaar
1 tsp Hararat (Libyan five-spice)
225g lamb meat (with some lamb bones)
1/2 tsp hot chilli powder
2 tbsp tomato purée
4 tbsp orzo pasta
1 bunch chopped coriander (cilantro)
2 tsp dried mint

Method:

Add the oil to a frying pan and use to cook the onion and lamb until nicely browned all over (about 10 minutes). Stir-in the tomato purée and spices along with 720ml water. Bring to a simmer and allow to cook slowly for 60 minutes. At the end of this time stir-in the pasta, coriander and mint.

Simmer gently for a further 10 minutes, or until the pasta is tender then ladle into soup bowls and serve.
