These recipes, all contain Demerara sugar as a major wild food ingredient.

Demerara sugar is a brown sugar that contains about 3.5% molasses and which gives it it's light brown colour. The sugar itself is named after Demerara, in Guyana where the sugar originated. These days, however, the sugar is produced in multiple places such as Jamaica, Malawi and Mauritius.

Demerara sugar is characterized by its large sparkling golden crystals and a crunchy texture. Traditionally it has been used to sweeten coffee, but it is also excellent for cooking especially in dishes such as crumbles, cheesecake bases, flapjacks and biscuits that require the extra crunchiness. These days it is also possible to buy demerara sugar with very fine crystals and this is much better for baking than traditional demerara sugar.
