Mulled Winter Fruit Crumble: A British Christmas dessert made dried fruit in a mulled wine base baked with a classic crumble topping
Ingredients:
350g mixed dried fruit (eg apples, apricots, figs, raisins, cranberries, currants)
300ml red wine
1 small bag of mulled wine spices (cinnamon, cloves, allspice, nutmeg)
1 thinly-pared strip of orange zest
50g caster sugar clotted cream, to accompany
For the Spiced Crumble Topping:
100g unsalted butter, chilled and cubed
200g wholemeal flour
1/4 tsp mixed spice (pumpkin pie spice)
pinch of salt
100g demerara sugar
Method:
Cut the dried fruit into bite-sized pieces and place in a non-reactive saucepan with the wine, mulling spices, orange zest and caster sugar. Heat gently then bring to a simmer and cook for 10 minutes. Take off the heat and set aside to cool.
Spoon the fruit into the baking dish and remove the bag of spices and the orange zest.
For the crumble topping, rub the butter into the flour, mixed spice and salt until the mixture resembles coarse breadcrumbs. Now stir in the sugar before lightly scattering the topping mixture over the dried fruit. As you add the mixture, mound it up slightly towards the centre.
Sit the baking dish on a baking tray then transfer to an oven pre-heated to 190°C and bake for about 25 minutes, or until the top is crisp and golden brown.
Remove from the oven, then set aside to cool for 5 minutes. Serve hot, accompanied by clotted cream.
