This is another twist on the classic Christmas mince pie, which, in this case is topped with a crumble, almond and orange zest mixture.
Ingredients:
275g (2 ¼ cups) plain (all purpose) flour, plus extra for dusting
140g (3/4 cup) butter, diced
Pinch of freshly-grated nutmeg
1 egg yolk
1 tbsp demerara sugar
Finely-grated zest of ½ orange
400g (15 oz) luxury mincemeat
15g (1/4 cup) flaked almonds
1 tbsp icing (confectioners’) sugar
Method:
Pre-heat the oven to 200C/180C Fan/Gas 6.
Combine the flour and butter in a food processor and whizz to fine crumbs (alternatively, dice the butter, add to the flour and rub with your fingertips until the mixture resembles fine crumbs). Set aside 75g (5/8 cup) of this crumble mixture.
Add the nutmeg, egg yolk and 3tbsp water to the remaining mixture and pulse slowly until the pastry comes together (or mix and knead with your hands). Wrap in clingfilm (plastic wrap) and chill for 30 minutes.
Meanwhile, stir the demerara and orange zest into the reserved crumble mixture.
Roll out the pastry thinly on a work surface lightly dusted with flour. Stamp out 18 x 10cm (7 x 5 in) diameter circles with a pastry cutter and use to line two bun tins (patty pans). Divide the mincemeat between the pastry bases. Stir the almonds into the crumble and sprinkle 1 tsp of this over each pie.
Transfer to your pre-heated oven and bake for 15-18 mins until pale golden. Serve dusted with icing sugar.
