Indonesian Peanut Sauce

This is the traditional Indonesian sauce that's traditionally served as an accompaniment for satay.

Ingredients:

1 tbsp vegetable oil
1 clove crushed garlic
2 hot green chillies, finely chopped
1 tsp demerara sugar
1 tbsp tamarind juice (made from 1 tbsp tamarind pulp and 3 tbsp boiling water)
1/2 tsp salt
200g peanut butter
1 small finely-chopped onion
1 small piece lemongrass, bruised
1/4 tsp shrimp paste (belachan)
1 tsp sweet soy sauce (Ketjap manis)

Method:

Fry the onion and garlic in the vegetable oil. Meanwhile mix the peanut butter with 150ml water and bring to the boil. Remove the peanut mixture from the heat and add the chilli, sugar, tamarind juice, salt, lemongrass, shrimp paste and soy sauce then add the fried onion and garlic. Return to the heat and bring to a simmer. Cook for about ten minutes until the ingredients soften and thicken.

Remove the lemongrass and serve as a dipping sauce for satay
