Basically these are pancakes, but they are such a big part of the Frisian New Year, that I could not resist publishing them during the run-up to the festivities.
Ingredients:
250g plain flour
175g butter (or half butter and half lard), melted and cooled
150g demerara sugar
1 egg
ground cardamom, ground cinnamon or ground aniseed, to taste (or a mix)
375ml water
Method:
Begin by mixing the sugar into the water until completely dissolved. Now work in the flour, butter, egg and spices.
Cover the batter and set aside to rest over night.
Heat a flat waffle iron or a griddle pan. Ladle the batter evenly and thinly over then either close the top part of fry and flip. Cook until golden brown.
As soon as they are done, roll into cone shapes and set aside to cool (they will harden as they cool). Continue in this manner until all the dough has been used up.
The cones can be stored in an air-tight container until needed.
