Plum Traybake Slices: British recipe for an almond sponge batter topped with plums that's baked to cook.
Ingredients:
175g butter, softened
175g golden caster sugar
3 eggs
55g ground almonds
175g self-raising flour, sifted
1/2 tsp baking powder
2 tbsp milk
6 large red plums, pitted and sliced into wedges
2 tbsp demerara sugar
Method:
Cream together the butter and golden caster sugar in a large bowl until light and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition, then fold in the ground almonds, flour and baking powder. Now mix in the milk until you have a smooth batter.
Turn the batter into a greased 23cm square, shallow, cake tin and level the surface with the back of a spoon. Top with the plum wedges and sprinkle over the demerara sugar.
Transfer to an oven pre-heated to 190°C (Gas Mark 5) and bake for 30 to 35 minutes, or until nicely risen, golden brown and firm to the touch. Allow to cool in the tin for 10 minutes then turn out onto a wire rack and set aside to cool completely before cutting into twelve slices and serving.
This can be served as a tea-time treat, but it also works well as a dessert with custard.
