I was really intrigued when I saw this recipe, pasta with a beef and yoghurt sauce with Middle Eastern flavourings. Lighter than your spaghetti bolognese but just as tasty. This makes an excellent weeknight dinner but is also just as good served as a meal to break the Ramadan fast... and it's ready in half an hour!

Ingredients:

For the pasta:
400g pasta, (shapes such as mafalda corta, farfalle and conchiglie work well).
Salt
2 tbsp olive oil

For the meat:
700g lean minced (ground) beef
2 medium onions, peeled and chopped
1 tbsp olive oil
2 tbsp ground allspice
1 tsp ground cinnamon
2 tsp sea salt
1 tsp freshly-ground black pepper
5 tbsp tomato sauce (or passata)

For the sauce:
750ml plain full fat yogurt
125ml tahini (sesame seed paste)
1 large garlic clove, crushed
4 tsp dried mint (or more per preference)
1/2 tsp sea
generous squeeze of lemon juice

To garnish:
Toasted pine nuts
Fresh herbs (eg mint, flat-leaf parsley, coriander)

Method:

First boil the pasta in salted water according to the packet instructions until al dente. Drain and then drizzle with olive oil to prevent sticking and set aside to keep warm.

Now prepare the meat. Place a pan over medium-high heat. When hot add the olive oil and use to fry the onion for about 6 minutes until soft and translucent. Add the minced beef, breaking it up into small pieces and cook it for 5-7 minutes, until browned and most of the moisture has dried up.

Add all the spices and the tomato sauce and mix well. Taste and adjust the seasonings.

To prepare the yogurt sauce, mix all the sauce ingredients together using a fork (do not use a blender).

Toast the pine nuts with half a tablespoon of olive oil in a pan until lightly golden.

To serve, layer the pasta in the base of a warmed serving dish, add the minced beef mixture, then add the yogurt sauce, and top with the pine nuts and any fresh herbs you like.
