A bouillon is a simple stock or an un-clarified broth. The name derives from the French verb bouillir — to boil. A bouillon is usually made by the simmering of Mirepoix and aromatic herbs (usually a Bouquet garni with either beef, veal, or poultry bones in boiling water.
